Ayurveda mentions multiple benefits of dates. Besides being a delicious fruit, dates are also full of beneficial nutrients and health boosting properties. Date palm was found in the Indus Valley region and today it is abundant in the middle east. For centuries, this fleshy delicious fruit has been used in kitchens in the middle east and south east Asian nations to flavour dishes, make honey substitutes and beverages. The wood of the tree is lighter than other similar desert trees and is used to constrict houses and bridges. But perhaps the most important use of dates has been as a nutritious food. Today we will share a pickle recipe that you can enjoy the whole year round. Dates are a rich source of iron which makes it ideal for someone with blood deficiencies. Dates have also been recommended for their high content of magnesium, selenium, copper, zinc and vitamins A & B.
Ingredients
Deseeded dates 250 gms
Juice of 12 medium sized lemons
1 tablespoon cumin powder
1 tablespoon red chilli powder
½ tablespoon table salt
Process
Wash and dry the dates properly to remove dust and dirt.
Julienne the deseeded dates.
In a glass jar place the julienned date slices, lemon juice, chilli powder, cumin powder and salt.
Place this jar in under the sun for 4-5 days.
Serve with meals.
