Wash ½ a cup sabudana (tapioca pearls) and let it sit for 15-20 min.
Next, boil 3 cups of coconut milk.
After one boil, simmer the heat and add Sabudana, ¼ tsp of saffron, 1 tsp lemon juice.
Stir frequently to prevent the sabudana from sticking to the pan. Then cook until it is soft and tender.
Add ¼ cup of sugar and a pinch of salt. Stir until fully dissolved.
Chill the pudding for an hour before serving. And enjoy!
