A simple sweet lime pickle packs a punch with its rich flavours. But it isn’t a favourite just for its taste. It has several benefits for your health and the body. According to Ayurveda, lime is an excellent remedy to ignite the digestive fire (agni). It helps ease heartburn and acidity, relieves headache, motion sickness, and morning sickness. Having 1tbsp lime pickle with your meals improves digestion and aids in better absorption of nutrients.
With so many benefits, it’s about time you learned how to make a pot of sweet lime pickle at home. After all, why would you trust your health to a mass produced product when you can make something much better yourself?
Cumin (jeera) – 2 tsp
Fenugreek (methi) – 1/2 tsp
Ginger (fresh) – 1 inch
Chilly – 1/2 tsp
Asafoetida (hing) – 1/4 tsp
Lime (nimbu) – 6 whole
Mustard powder (sarso powder) – 1/2 tsp
Mustard seed (sarso ke beej) – 1/2 tsp
Jaggery (or sugar) – 2 tbsp
Salt (mineral salt) – 1 tsp
Sunflower oil – 1 tbsp
Boil the limes till they are cooked. Let it cool and then squeeze out the juice.
In a food processor, grind the lime skins with salt, chillies, ginger, and cumin.
Mix this with jaggery and lime juice. If you don’t like jaggery or can’t find it, you can use sugar as a substitute.
Fry the remaining spices in oil. Combine with lime mixture.
You can eat the pickle immediately, or let it sit for several days to evenly distribute the flavours.
