Coriander-Coconut Chutney

Fresh green coriander leaves are not just used to garnish Indian dishes or spice up recipes. It is also made into chutney (sauce) that complements a wide range of food items. Another important part of this recipe is coconut. It is known to have great taste and a wide range of health benefits. Coriander is rich also rich in antioxidants. This pitta pacifying chutney can be eaten with many dishes like idly, dosa, pakode and dhokla.

Ingredients

  1. Half a fresh coconut
  2. One cup fresh coriander
  3. ¼ cup roasted Bengal gram split pulse
  4. 8-10 curry leaves
  5. 8-10 fresh mint leaves
  6. Juice of one lemon
  7. One green chilli
  8. One inch long ginger piece
  9. Salt according own taste

Method

  • Chop coconut into small pieces after washing it thoroughly.
  • Mix chopped coconut pieces with all other ingredients and blend to a smooth paste.
  • Add water according to the desired thickness you want in the chutney
  • Now the chutney is ready to serve. It remains fresh for up to 6-8 hours.
