Coconut with Rosewater, Pistachios & Strawberries: A Healthy & Delicious Snack

Before you dismiss Ayurveda as a fix for your mid-day cravings, the ancient food philosophy has actually been around for generations. It focuses on aligning your body’s energies and balance by promoting the use of Ayurvedic ingredients. These ingredients have anti-inflammatory properties and aid good digestion. So, let’s take a stab at this indulgent, flavorful recipe of coconut bark with the cooling properties of rose water. Perfect to munch on to pacify Vata and Pitta dosha!

  • Take a baking tray and cover it with a baking sheet or paper

  • Melt 55 grams of coconut butter in a bowl resting over boiling water.

  • Add 400ml of coconut cream, two tablespoons of rosewater and a pinch of salt to the warm coconut butter.

  • Mix the ingredients thoroughly to combine them.

  • Pour the mix onto the prepared tray. Garnish with a handful of strawberries and a handful of roughly chopped pistachios.

  • Freeze the mix until solid. Remove the tray from the freezer and break into shards or chop into squares. And voila! We have an instant snack with the goodness of Ayurveda.
